Has anyone here tried this oil in their cooking? I'm curious as to what kind of flavor it may impart to the food. Where to get a good one? Are those extra virgin olive oil with 1% truffle flavoring sold in the supermarkets any good?
I wonder if its possible to get some truffles and make the oil ourselves...

Those are pretty good with focacia bread. Smiley
Of course, real truffle is even nicer, truffle taste is rather subtle so best not to mix with any strong tasting stuff or you will overpower it. The last I saw restaurant grade truffle it costs like US$3000/kg, so I can't afford to buy it. Could only afford as a luxury soup with truffle shavings Tongue

Truffle oil is best used in salads, especially if you use mushrooms. A great way to give an "expensive" taste without spending lots of $$$. I used it a lot back in The Netherlands because it was quite cheap. Haven't been able to find a decently priced bottle here though.

not that expensive, around 5 bucks for the helping, i always order upsize and double it.  trust me, once u've tried it, u'll wanna upsize.

True... truffle oil and truffles are all a lot cheaper in Europe. Have yet to find it cheap. You can even easily find truffles in the woods of Tuscanny.

HI everyone,

Long time since my last post ... but getting down to it

a lot of times truffle oils these days don't actually contain real truffles. The issue is that the taste of a real truffle can't be fully captured in oils... so a lot of well 'aroma' aka Chemicals are added. a lot of times truffle oil doesn't actually taste like truffles at all!

Truffles are NOT easy to find ... firstly they are buried like 10 cm in the ground and require a trained pig or dog to find... a lot of times these dogs and pigs especially the good ones, are worth their weight in truffles. Secondly, they only grow at the roots of selected trees eg. Oak tree ....

Its just incidentally I purchased last week a fresh black summer Peregeaux Truffle (yes its US3000 dollars a kg) but I bought only 80g, and invited some friends (including some from Jaben) for dinner, and compared it with purchased white truffle oil (which incidentally uses real white truffles 5%, infused with olive oil for over 1 month). For certain recipes eg. scrambled eggs with truffle oil instrad of fresh truffles, it does make a lot of difference.

But the good thing is that unless you konw what a real truffle taste like ... the oils is good enough. And we use the oils very sparingly as they are strong in flavour ... like 1 or 1/2  teaspoon per person to put inside AHEM Oglio Oglio makes a whole new dimension to it ( I just used truffles today for lunch in home made ogliooglio) . So its not THAT expensive because the amount use is so little in oil.

 Using it in a strong tomato pasta eg. Bolognaise is a complete waste as the subtle flavour of truffle will be lost, due to the other overpowering taste...

Where did you get the oil and how much is it?
Real truffle is too rich for me and would probably be wasted by my inexpert cooking skills.
